Ingredients:
• ½ cup City Roots Grated or Diced Carrots
• ½ cup City Roots Asparagus
• 1 whole medium Red Onion, Diced
• 1 pounds Ground Turkey
• 3 sprigs City Roots Oregano, minced
• 1 handful City Roots Microgreen Basil
• 1 can (6 Ounce) Tomato Paste
• 5 cloves/ 1 tbsp minced Garlic
• 1 can diced tomatoes
• 1 cup Milk
• Salt And Pepper, to taste
• Olive Oil
• Splash red wine (cab, bordeaux is best)
• Fresh Parmesan Cheese

Preparation Instructions
Heat a layer of oil in a large skillet over medium heat. Add in the ground turkey. Cook for a few minutes until almost brown. Add in carrots, onions and asparagus and cook for a few minutes, stirring carrot mixture into the ground turkey.
Throw in oregano and half the garlic. When the meat is browned and combined with other ingredients, make a well in the center of skillet. Add tomato paste and let it heat. Add second half of garlic and stir to combine.
Make a well in the center of the mixture and add splash of red wine. Stir together. Add canned tomatoes. Finally, pour in milk and add basil microgreens, stir, and let simmer for 30 minutes.
Serve with pasta and a generous sprinkling of Parmesan cheese, and salt and pepper to taste.
